Chia parfait

I wanted to share my easy-to-make chia parfait recipe with you. A staple at our family brunch!


Preparation Time:25 minutes

Servings: 2


Ingredients:


Chia Pudding:


- 2 cups of coconut milk yogurt (I like the vanilla-flavored Riviera)

- ½ cup of coconut milk

- ½ cup of whole chia seeds

- 2 tablespoons of maple syrup

- 1 ripe banana, mashed


Put all the ingredients in a container with a lid. Mix well and cover with the lid. Refrigerate for at least 2 hours before eating.


Jam:


- 2 cups of strawberries (fresh or frozen), diced

- 1 cup of raspberries

- 4 tablespoons of honey

- ½ teaspoon of agar agar flakes


Put all the ingredients (except agar agar) in a small saucepan over medium heat, stirring occasionally. Bring to a boil and continue to stir. Reduce the heat to low and let it cook for 5 minutes. Add the agar agar, mix, and remove from heat. Transfer to a jar. It can be stored in the refrigerator for one week.

*Agar agar is a type of algae that replaces gelatin in jams. It helps bind everything together and gives jams a nice texture. It's essential to add it only at the end of cooking.


To assemble the parfaits:


Take two large sundae or parfait glasses.

Start by placing some of the chia pudding in them.

Next, add a bit of jam.

Continue with your choice of granola.

Repeat the steps and finish by adding edible flowers or fresh berries for a festive look.
