Almond Butter Cookies with Freeze-Dried Strawberries and Dark Chocolate Chips

This one-bowl recipe is quick, easy, and packed with wholesome ingredients like almond butter, oats, and freeze-dried strawberries. These cookies are naturally sweetened with maple syrup and are perfect for a nutritious snack or dessert.
Ingredients
- 1/2 cup maple syrup (natural sweetener, rich in antioxidants)
- 1/2 cup almond butter (high in protein and healthy fats)
- 1 tsp vanilla extract
- 1/3 cup butter or coconut oil, melted (your choice for richness or plant-based option)
- 3/4 cup almond flour
- 1 1/2 cups quick oats
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1 tsp baking powder
-1/2 cup freeze-dried strawberries
-1/4 cup dark chocolate chips
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine almond butter, maple syrup, melted butter (or coconut oil), and vanilla extract. Stir until smooth.
3. Add almond flour, oats, cinnamon, baking soda, and baking powder to the wet mixture. Stir until well combined.
4. Fold in the freeze-dried strawberries and dark chocolate chips.
5. Using a spoon or cookie scoop, drop small mounds of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon or your fingers.
6. Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
